Well actually, a few words: tortillas and Packit Gourmet.
First, tortillas are your friend because they pack flat, they don't really need refrigeration, and because you can stuff them with just about anything or even eat them naked.
Second, Packit Gourmet makes really really good food. I have a fruit smoothie for breakfast after coffee. I have had their Big Easy Gumbo, and it is wonderful. Even the okra re-hydrated well! With the lucky bay leaf and the included packet of Tabasco, it was better than many a restaurant offering. They also have an All America Cheeseburger meal that tastes like a cheeseburger but chews like a taco because you use a tortilla instead of a bun. Nathan Myhrvold would be pleased with this concept. I also enjoyed the cheesecake about which I wrote earlier.
The other two dehydrated meal manufacturers whose products I've tried on this trip were okay, but nothing to rave about.
I will try to do better writing about my camping experiences, food included.
I'm a big Mountain House fan especially since they started vacuum sealing the packages - very light and now even more compact. The meal quality, however, can be a little uneven.
